My girlfriend makes these little beauties, and when I read the recipe, I was surprised to see coconut and walnuts in it. But then maybe I just gobbled them down so fast I never noticed - so I just followed the recipe.
I later learned she leaves them out - so coconut & nuts are optional!
Also, I couldn't find plain white marshmallows, which I prefer, so I think I need to make these again and try them 'plain'.
Ingredients:
1/2 cup butter (I used margarine) $0.39
1 pkg Butterscotch Chips (I used 2 cups from local bulk food store) $2.25
1 cup Peanut Butter $0.24
1 cup Flaked Coconut $0.96
1 cup chopped Walnuts $1.20
3 1/2 cups Mini Marshmallows (I just used the whole package) $1.66
Total Cost: $6.10 - 16 servings $0.38/serving
1. Melt peanut butter and margarine together over medium heat. Watch carefully.
2. When mostly melted, add the butterscotch chips so you stop snacking on them. Watch carefully so it doesn't burn.
3. Once melted & combined, add coconut and walnuts. Stir to combine evenly. Remove from heat and quickly stir in marshmallows.
4. Dump it all into a greased 9x13" pan. Chill until set.
Addictive and Dangerous. It's easy to eat the pan! The peanut butter / butterscotch chips make a fudge-like love hug for the marshmallows....
